That Kikkoman is real mirin, since Kikkoman is a Japanese Company. You can usually find Mirin in Asian Supermarket. Try to find one close to your city.

I tried this with yellow tail filets 2 days ago, and it was a success. I did not include the turnip in the preparation. Instead i paired it with coconut rice and celery root salad. I topped the fish with sliced green onion to add some contrast. Unfortunately, i overcooked the the fish by letting sauce bubble too long. Which sake do you recommend for cooking? Should i use a basic drinking sake? Where can i find hon mirin? my store only carries imitation mirin by kikkoman.

it's not hard to make.but it's seasonal. my granpa usually plant it in the srping so it can bloom in the summer. the chrysanthenum used here is edible one, not the same like chrysanthenum that bloom flower. even though it looks the same, the edible one leaf is generally smaller( in mu opinion). you can find it in the asian market especially vietnamese market.
